Sir Chester might be the strangest recruit in Sovereign Tower, and the game itself doesn’t seem entirely convinced he counts as one either.
He has no fixed stats, likes literally every meal in the game, and somewhere in his second affinity scene he notices the pink dialogue options and starts commenting on them directly.

The game’s own bio for Chester reads, in full: “Sir Chester is…a knight (?)…of your Round Table (???).” He is, mechanically, a dice roll. Every one of his combat and quest stats is randomized fresh each time the game checks them. He likes every meal in the game.

All six meals in the game. Chester is the only knight on the roster with no food preferences at all.
Chester has no fixed stats. His character script overrides every stat check to return a fresh random number between 0 and 15 each time. Starting level is listed as 15, but that number feeds a randomizer rather than a fixed stat block.
How to Unlock Chester

Chester is unlocked as the random follow-up audience of a special outcome on “Cleankeeper Goose,” part two. Three separate triggers all lead to him, so you only need one: send a knight with a horse trait, send a knight with cheese equipped trait, or send Gwendan specifically.
His recruiting line is “Was this bird not, in the end, just looking for a little company, like the rest of us?”
Interactions
One-Heart Event
None of Chester’s dialogue choices raise or lower affinity, but still:
Chester wants to compliment your Tower: “This Tower is certainly well-stocked, Your Grace… Do you *already* like it here?” He opens with a small reaction choice before getting to the point.
Dialogue Choices:
A neutral acknowledgment (“More than ever.” / “You betcha!” / “…And you?”)
An audacious tease (raises the Audacious sovereign tag)
Either way: “The various rooms are cleverly thought out and arranged. A true little architectural gem.” Then he confesses an almost carnal tenderness for the Kitchens specifically, and offers to talk about any of the four rooms.

Every path closes the same way: “Anyway, this place is my sanctuary, my epicentre… my little slice of paradise. I may never leave.”
Two-Heart Event
Same as above, nothing here moves affinity either. Chester has been interviewing your staff, and this scene ends with the game’s most direct fourth-wall break.

Then the fourth wall goes entirely: “Wait, how curious… I now have these pink text options floating before my eyes when I address you. Do you think I should use them?”
Dialogue Choices:
“NO. NO THANK YOU.” (he lets it drop with a single, deflated “Sad.”)
“Yes?” (opens the romantic path)
Down the romantic path: “In reality, YOU are the most sparkling soul in this entire Tower, Your Grace! I adore you! If only YOU could be the one granted a raise! Alas, you work for free… A sacrifice of heartbreaking nobility. I love you.”
Dialogue Choices:
“At once, Your Grace!” (plays along with the bit)
“Leave me alone.” (he retreats: “Pitiful is the life of the Sovereign of the Tower…”)
“Me too, Chester. But… I feel like I can’t express my love to you.”
